Picked perfectly ripe, 1/3 whole- bunch, the rest destemmed as whole berries, 7 days on skins, no plunging or pumping, minimal extraction, gently pressed, fermented in stainless steel then racked to old french puncheons for 6 months, assembled in stainless with a small amount of sulphur(25ppm) added at bottling, no other adds. In the glass - A bright, joyous Syrah that unfurls in the glass with aromas of dark cherry, rose petal, blood orange and allspice. Light on its feet and yet layered, with a fleshy core of fruit, powdery tannins and a distinct minerality, it strikes a balance between delicious immediacy and thoughtful intrigue. Best served with a light chill - ideal serving temperature 12 degrees. - Tim, Winemaker.
